Unlike its Indo-Chinese cousin, which relies heavily on soy sauce and red chillies, true-blue Andhra chilli chicken is famously spicy, tangy, slightly rustic, and distinctively green.

Why This Swap Actually Works?
- Soya chunks act like a total sponge for that iconic, fiery green chilli heat and savoury sauce.
- Soya chunks get a bad rap for being bland, but that is exactly their superpower. When prepared correctly, they have a remarkably similar chew to chicken, and they absorb flavour right to the core.
- To mimic the signature texture of the restaurant version, we will perform a dual-step process: boil and squeeze the soya nuggets to remove any raw soy taste, marinate them so they flavour from within, and give them a light crisp fry before tossing them into the aromatic Andhra spice base.
Ingredients You’ll Need
The Soya Prep and Marination:
- Soya Nuggets or the soya wadi, also known as meal maker. It is a vegan, vegetarian, high-protein plant-based ingredient with a chewy, fibrous, mock meat-like texture.
- Coconut Milk or thick curd to balance the heat, and binding the marinade.
- Ginger-Garlic Paste, Salt, Red Chilli Powder
The Signature Andhra Green Paste
- Fresh Green Chillies adjust based on your spice tolerance!
- Fresh Coriander Leaves, and Mint for the bright green colour and refreshing taste.
- Cashews make the green paste thick and luscious.
- Garlic Cloves, Ginger, Cumin Seeds, Coriander Seeds, and Black Peppercorns
For the Stir-Fry (The Aromatics)
- Sesame or Peanut Oil for that nutty taste.
- Curry Leaves absolutely non-negotiable for Andhra cuisine.
- Onion and Capsicum, thinly sliced.
How To Make Soya Chilli
1. Prep the Soya Nuggets:
- Bring a large pot of water to a boil with a pinch of salt. Turn off the heat.
- Drop in the soya nuggets and soak for 10 minutes until they double in size and become completely soft.
- Drain them, let them cool slightly, and then squeeze out every drop of water you can. This step ensures they aren’t water-logged and can absorb the spices.
2. Marinate and Crisp:
- In a bowl, mix the squeezed soya nuggets, onion, capsicum with ginger-garlic paste, coconut milk, lemon juice, salt, and rice flour. Let it sit for 10 – 15 minutes.
- Heat oil in a pan, add curry leaves, and stir-fry the marinated soya chunks until the edges turn golden brown and lightly crisp.
3. Make the Green Magic:
- While the soya is cooking, toss the coriander seeds, cumin seeds, green chillies, coriander leaves, mint, soaked cashews, ginger, and garlic into a small blender.
- Pulse into a coarse, vibrant green paste using water or coconut milk to get the smooth consistency.
- Pour in the blended green paste over the soya nuggets, sauté on medium heat for 3-4 minutes until the raw smell of the chillies disappears. Add the water or stock, and bring it to a simmer.
- Squeeze lime juice for the refreshing taste. Turn off the heat.
Andhra Style Soya Chilli is ready to serve.
Serve it Right
This Andhra Style Soya Chilli is spectacular as an appetizer or a party food, but it also pairs beautifully as a side dish alongside comforting Pappu Charu (Andhra-style dal/rasam) and steaming hot rice slathered with ghee.
If you are on a protein rich diet, then it is an excellent lunch in itself, serve it with a leafy or fibre rich salad like Kachumber.

- Managing the Heat: Andhra food is notoriously spicy. The heat in this recipe comes entirely from fresh green chillies. If you want the signature green colour and flavour without your eyes watering, slice the chillies down the middle and scrape out the seeds before blending!

- 2 tablespoon coconut milk
- 1 tablespoon ginger garlic paste
- 1 tablespoon rice flour (chawal ka atta)
- ¼ teaspoon salt
- 1 medium onion, sliced
- 1 medium capsicum, sliced

- ½ bunch fresh coriander leaves
- ¼ Cup fresh mint leaves
- 2 tablespoon cashews (kaju)
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds (jeera)
- ½ teaspoon black peppercorns
- 6 green chillies sliced
- 6 garlic cloves
- ½ inch chopped ginger
- coconut milk to blend

- 2 tablespoon sesame oil
- 2 sprigs curry leaves

Recipe Notes:
- You can substitute coconut milk with plain, thick curd or Yogurt in the recipe.
- Soya Nuggets can be marinated and stored overnight in the refrigerator. Similarly, you can blend the green masala and store.
