Why Ribboning Beats Chopping?

The secret to this Asian salad’s addictive texture is the ribbon cut. When you slice a cucumber or carrot normally, you get dense chunks. By using a standard Y-peeler or a mandoline to create thin ribbons, you alter how the vegetables interact with your palate.

Not only does this technique look gorgeous on a plate, but it also maximizes the surface area of the veggies, allowing them to soak up a punchy sesame-ginger vinaigrette.

Ingredients You’ll Need

  • Persian or English Cucumbers also work beautifully; avoid standard slicing cucumbers like Indian variety as their skins are too tough and seeds too large.
  • Carrot, any variety or colour works for this ribbon salad, just make sure its long enough in size to give you good ribbons.
  • Onion, Cilantro, Toasted Sesame Seeds (Black and white mixed look best).

The Sichuan Style Dressing

  • Schezwan Sauce or Red Chilli Sauce is the key base of the dressing.
  • Toasted Sesame Oil provides that deep, nutty base note.
  • Light Soy Sauce or tamari if you are gluten-free.
  • Honey or Maple Syrup to cut down the heat of chilli sauce.
  • Chilli Flakes or Korean Gochugaru for the sweet, spicy kick.
  • Lemon Juice or rice vinegar for a mild, slightly sweet acidity
  • Garlic and Salt

How To Make Ribbon Salad

1. Whisk the Dressing:

  • In a small bowl, vigorously whisk together the dressing ingredients until emulsified. Taste, and adjust seasoning accordingly.

2. Shave the Ribbons:

  • Place a carrot flat on a cutting board. Holding it by the stem end, run a vegetable peeler firmly from the top to the bottom to create long, wide ribbons. Rotate the carrot as you go. Repeat the exact same process with the cucumbers.

Pro Tip: Stop shaving when you reach the watery, seed-heavy core of both vegetables.

3. Assemble Salad

  • In a large mixing bowl, gently toss the carrot and cucumber ribbons together with the sliced green onions and chopped cilantro.
  • Drizzle the dressing over the salad and toss gently to coat. Use your hands or tongs to avoid breaking the delicate vegetable strips.
  • Transfer to a serving platter and generously shower the top with the toasted sesame seeds and crushed nuts.

Defeating the “Soggy Salad”

Cucumbers are roughly 95% water. If you dress this salad and let it sit for an hour, you will end up with a puddle of water at the bottom of your bowl and limp ribbons.

If you are preparing this ahead of time for a dinner party or meal prep, keep the shaved vegetable ribbons wrapped in a damp paper towel in a sealed container in the fridge. Keep the dressing separate. Toss them together literally 2 minutes before you intend to eat.

  • handful of cilantro, chopped
  • 1 tablespoon toasted sesame seeds
