Bring a large pot of water to a boil with a pinch of salt. Turn off the heat. Drop in the soya nuggets and soak for 10 minutes until they double in size and become completely soft.
Drain them, let them cool slightly, and then squeeze out every drop of water you can. This step ensures they aren’t water-logged and can absorb the spices.
In a bowl, mix the squeezed soya nuggets, onion, capsicum with ginger-garlic paste, coconut milk, lemon juice, salt, and rice flour. Let it sit for 10 – 15 minutes.
Heat oil in a pan, add curry leaves, and stir-fry the marinated soya chunks until the edges turn golden brown and lightly crisp.
While the soya is cooking, toss the coriander seeds, cumin seeds, green chillies, coriander leaves, mint, soaked cashews, ginger, and garlic into a small blender. Pulse into a coarse, vibrant green paste using water or coconut milk to get the smooth consistency.
Pour in the blended green paste over the soya nuggets, sauté on medium heat for 3-4 minutes until the raw smell of the chillies disappears. Add the water or stock, and bring it to a simmer.
Squeeze lime juice for the refreshing taste. Turn off the heat.
Andhra Style Soya Chilli is ready to serve.
