Traditionally – a paniyaram or appe is made with fermented idli dosa batter. Over the years with the growing popularity of appe as easy and tasty teatime snack, there is an instant version of the dish with semolina (rava) called instant rava paniyaram.

Loaded with the nutritional power of finger millet (ragi), crunchy semolina (rava), and vibrant colourful vegetables, these bite-sized snacks deliver a crispy outer shell with a soft, pillowy core—no overnight fermentation required!

Ingredients You’ll Need

  • Batter Base: Finger Millet (ragi) Flour, fine rava (sooji/semolina), whisked sour curd, and water (as needed).
  • Mixed Vegetables like finely chopped onions, capsicum, bell peppers, grated carrots, or sweet corn.
  • Greens and Herbs like finely chopped coriander leaves, curry leaves, spring onion, spinach, fenugreek, or the moringa leaves are best to mix into the batter.
  • Seasoning: Cumin Powder, Asafoetida (hing), Salt to taste
  • Leavening Eno fruit salt (plain flavour) or baking soda. They help to aerate the batter and make it instantly light and fluffy.
  • Tempering (Tadka): Black Mustard Seeds (rai), White Sesame Seeds, Cumin (jeera), and the sesame or peanut oil.

How To Make Ragi Appe

1. Prepare the Batter Base:

  • In a mixing bowl, combine ragi flour, fine rava, whisked curd, and water in small batches.
  • Whisk continuously until you achieve a lump-free, thick batter.

  • Cover and let it rest for 10–15 minutes so the rava absorbs the liquid and swells.
  • Check the consistency of the batter—it should resemble thick idli batter (add a tablespoon of water if it feels too stiff).

2. Add Vegetables and Seasoning:

  • Add the colourful finely chopped vegetables, spices, salt, and herbs to the batter.
  • Mix them nicely into the batter until well combined.

3. Add Leavening Agent:

  • Right before cooking, sprinkle the Eno fruit salt or baking soda over the batter with a splash of water. Gently fold until light and airy.

Hina’s Pro Tip: This step should be done towards the end. After adding baking soda, do not let the batter sit for too long.

4. Pan-Fry in Appe Pan:

  • Grease each cavity of an appe pan with a few drops of oil.
  • Add ¼ teaspoon mix of black mustard seeds and white sesame seeds. Once seeds start crackling, pour a spoonful of batter into each cavity until three-quarters full.

  • Cover with a lid and cook on medium-low heat for 3 – 4 minutes until the bottom of appe turn deep golden-brown.
  • Flip each appe using a skewer or fork, and cook covered for another 2 – 3 minutes until fully cooked inside.

Similarly, cook remaining ragi appe in batches.

Serving Suggestion

Pair these hot, crisp ragi appe with coconut-coriander chutney, roasted tomato chutney, or a refreshing pudina chutney. For lunch, you can serve them with piping hot vegetable sambar or tomato garlic rasam.

Ragi Appe are an excellent choice for teatime snack or a tea party. They remain fresh and soft for hours in the lunchbox also.

Hina’s Pro-Tips for the Crispiest Appe

  • Rava Selection: Use fine rava for a smooth batter that holds its shape well. If you only have coarse rava, pulse it briefly in a blender.
  • Vegan Alternative: Swap regular curd with coconut curd or almond yogurt, to keep the recipe completely vegan.
  • Do Not Flip: Appe are not meant to be flipped again and again while cooking. Once crisp and fully cooked from one side, then only flip them.
  • Let It Rest: After making the batter let it rest for 10 – 15 minutes before adding the vegetables and spices.

  • 1 Cup finger millet flour (ragi/nachini atta)
  • ¼ Cup semolina (suji/rava)
  • ⅓ Cup curd or yogurt
  • ½ Cup water, at room temperature
  • ½ teaspoon cumin powder (jeera powder)
  • ½ teaspoon salt or to taste
  • ¼ teaspoon red chilli powder
  • ¼ teaspoon hing (asafoetida)
  • 1 medium onion, finely chopped
  • 1 small red bell-pepper, finely chopped
  • 1 sprig curry leaves, chopped
  • 1 green chilli, finely chopped
  • handful of fresh coriander leaves, chopped
  • ¼ teaspoon cooking soda or baking soda
