In a mixing bowl, combine ragi flour, fine rava, whisked curd, and water in small batches. Whisk continuously until you achieve a lump-free, thick batter. Cover and let it rest for 10–15 minutes so the rava absorbs the liquid and swells.
1 Cup finger millet flour (ragi/nachini atta), ¼ Cup semolina (suji/rava), ⅓ Cup curd or yogurt, ½ Cup water, at room temperature
Add the colourful finely chopped vegetables, spices, salt, and herbs to the batter. Mix them nicely into the batter until well combined.

Right before cooking, sprinkle the Eno fruit salt or baking soda over the batter with a splash of water. Gently fold until light and airy.

Grease each cavity of an appe pan with a few drops of oil. Add ¼ teaspoon mix of black mustard seeds and white sesame seeds. Once seeds start crackling, pour a spoonful of batter into each cavity until three-quarters full.

Cover with a lid and cook on medium-low heat for 3 – 4 minutes until the bottom of appe turn deep golden-brown.
Flip each appe using a skewer or fork, and cook covered for another 2 – 3 minutes until fully cooked inside. Similarly, cook remaining ragi appe in batches.
Serve crisp ragi appe with coconut-coriander chutney.
