Asian Ribbon Salad Recipe

Here is the ultimate Asian Ribbon Salad with cucumber and carrot - vibrant, incredibly crisp, tossed in an umami Sichuan style dressing.

Equipment

Ingredients

  • 2 medium Persian Cucumbers
  • 2 large Carrot
  • 1 onion, sliced
  • handful of cilantro, chopped
  • 1 tablespoon toasted sesame seeds

Ingredients For Dressing

  • 1 tablespoon Schezwan sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon light soy sauce
  • ½ teaspoon honey
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon Korean Gochugaru (chilli powder)
  • 2 garlic cloves, minced or crushed

Instructions

  • In a small bowl, vigorously whisk together the dressing ingredients until emulsified. Taste, and adjust seasoning accordingly.
    1 tablespoon Schezwan sauce, 1 tablespoon toasted sesame oil, 1 teaspoon light soy sauce, ½ teaspoon honey, ¼ teaspoon salt or to taste, ¼ teaspoon Korean Gochugaru (chilli powder), 2 garlic cloves, minced or crushed
  • Place a carrot flat on a cutting board. Holding it by the stem end, run a vegetable peeler firmly from the top to the bottom to create long, wide ribbons. Rotate the carrot as you go. Repeat the exact same process with the cucumbers.
    2 medium Persian Cucumbers, 2 large Carrot, 1 onion, sliced, handful of cilantro, chopped
  • In a large mixing bowl, gently toss the carrot and cucumber ribbons together with the sliced green onions and chopped cilantro.
  • Drizzle the dressing over the salad and toss gently to coat. Use your hands or tongs to avoid breaking the delicate vegetable strips. Transfer to a serving platter and generously shower the top with the toasted sesame seeds and crushed nuts.
    1 tablespoon toasted sesame seeds
  • Asian style ribbon salad is ready to serve.
