High Protein Smashed Chickpea and Avocado Cucumber Boats are a total game-changer, nutrient-dense spin on a classic tuna or chicken salad sandwich—except we are swapping the heavy mayo for creamy avocado, boosting the protein with hearty chickpeas and tahini, and ditching the bread entirely for a crisp, hydrating cucumber shell.

The Secret to Boosting the Protein

While chickpeas provide a solid foundation of plant-based protein and complex carbs, we can easily dial up the protein macros by making two small tweaks to the creamy filling.

Instead of relying solely on mashed avocado to bind the stuffing, we’ll fold in a few tablespoons of tahini paste (or a high-protein plant-based yogurt). To give it a savory, cheesy depth while adding even more protein and B-vitamins, we also throw in a tablespoon of nutritional yeast.

Ingredients You’ll Need

The Vessel:

  • English Cucumbers work best because they have fewer seeds, thinner skin, and a uniform shape perfect for stuffing.

The Filling:

  • Pre Cooked Chickpeas (Garbanzo beans) thoroughly drained. You can boil them at home or use canned ones.
  • Ripe Avocado, pitted and scooped
  • Tahini Paste or unsweetened soy/plant yogurt for a vegan option
  • Nutritional Yeast optional, for flavour and a protein boost
  • Red Onion, Chopped Cilantro, Grated Garlic
  • Salt, Oregano, Cumin Powder, and freshly cracked black pepper to taste

Optional Toppings:

  • A sprinkle of Everything Bagel Seasoning
  • A dash Sriracha or chili flakes for a spicy kick
  • A drizzle of mint mayo, or whipped tofu.
  • Hemp hearts for an extra tiny sprinkle of protein and omega-3s

How To Make Cucumber Boats

1.Prep the Cucumber Boats:

  • Slice the English cucumbers completely in half lengthwise.
  • Take a small spoon and gently scrape out the watery seeds down the center of each half, creating a hollowed-out ditch or “boat”.

  • Flip the hollowed-out cucumbers upside down onto a paper towel. Let them drain for a couple of minutes while you make the filling. This prevents your boats from getting water-logged or soggy.

Pro Tip: Don’t throw away the seeds—toss them into a water pitcher, salad, or a green smoothie later!

2.Smash the Base:

  • In a medium mixing bowl, add the pre cooked/canned chickpeas and the scooped avocado. Using a sturdy fork or a potato masher, mash them together.
  • You want to leave some texture—aim for a chunky, rustic smash rather than a completely smooth puree.

  • Add the rest of the filling ingredients. Mash everything together thoroughly until the mixture is beautifully creamy and well-combined.
  • Taste and adjust the lemon juice or salt if needed.

3.Stuff and Garnish:

  • Flip your cucumber boats right-side up. Spoon the chickpea-avocado salad generously into the hollowed centers, pressing it down slightly so it stays secure. Fill them right up to the top!
  • Right before serving, drizzle mint mayo or red chilli flakes.
  • Slice each long boat into 3 or 4 smaller, bite-sized logs if you are serving them as finger foods or sharing them with friends!

Can You Meal Prep This?

Yes, but with one caveat: Keep the components separate.

  • You can mix the smashed chickpea and avocado salad up to 24 hours in advance. Because of the fresh lemon juice, the avocado will resist browning quite well if kept in an airtight container with a piece of plastic wrap pressed directly against the surface of the mixture.
  • However, do not hollow out or stuff the cucumbers until the day you plan to eat them. Cucumbers start to weep water once they are cut and salted, so assembling them fresh ensures you get that maximum, pristine crunch that makes this recipe so incredibly addictive.
