This dip recipe takes the classic 1950s party staple and gives it a modern, tangier, sophisticated upgrade by swapping out some of the heavy mayonnaise for a blend of sour cream and goat cheese. The result? A dip that is incredibly rich but won’t leave you feeling weighed down.
There is a massive, flavourful world of difference between the “onion dip” that comes in a plastic tub and the version you make at home.

The Secret: Patience is the Ingredient
Before we look at the list, let’s be real: you cannot rush onions. To get that deep, jammy, mahogany colour, you need to cook them low and slow.
Scientific Tip: Caramelization is a chemical reaction that creates the complex, nutty sweetness, making the dip truly addictive.
Ingredients You’ll Need
The Onion Base:
- Yellow Onion have the highest sugar content for caramelizing. But I have used red/pink onion as they are more readily available in India.
- Garlic is optional but I like the savoury flavour and fried bits.
- Olive Oil or Butter to fry the onions.
- Salt to help draw out moisture.
- Wine Vinegar to deglaze the pan and add a touch of acidity.
The Creamy Foundation:
- Goat Cheese as the main creamy base of the dip.
- Sour Cream balances the heaviness of cheese and adds a touch of tanginess.
- Herbs: Flat Parsley, Cilantro and a few sprigs of dill leaves.
How To Make Caramelized Onion Dip
1. The Caramelization (The “Low and Slow” Phase)
In a large skillet, melt the butter or oil over medium-low heat. Add the diced onions and salt.
- The First 10 Minutes: The onions will turn translucent and soft.
- The Next 20 Minutes: They will turn golden. Stir every few minutes to prevent sticking. Add minced garlic at this stage. Not before else it will turn black and bitter.
- The Finish: Once they are a deep, dark brown (about 30 minutes total), splash in the vinegar to scrape up the browned bits (the fond) from the bottom of the pan. Remove from heat and let them cool completely.
2. The Blend
- In a food processor whisk together the sour cream, cheese, and half of the caramelized onions. Reserve half for folding into the dip.
3. The Marriage
- Fold the remaining caramelized onions, chopped herbs, into the creamy mixture. This way you get best of both the worlds.
- Reserve a teaspoon of onions for the top if you’re feeling fancy.
4. The Chill (Crucial Step!)
Cover the bowl and refrigerate for at least 2 hours. This allows the onion flavors to infuse into the dairy. If you eat it immediately, it will be good; if you eat it the next day, it will be life-changing.
Serving Suggestion
While a bag of ridged potato chips is the gold standard, don’t sleep on these alternatives:
- Warm Pita Bread: Soft and pillowy.
- Pretzel Thins: For maximum saltiness.
- Cucumber Slices: For a fresh, hydrating crunch.
- Crispy Smashed Potatoes: If you want to turn the dip into a side dish.
Hina’s Tried and True Tips
- Don’t over-process: Use a spoon to mix, not a blender. You want those little “jewelry bits” of onion texture in every bite.
- The Substitution: You can replace goat cheese with Greek Yogurt. Use Full-Fat (5%) Greek yogurt if possible. Non-fat versions can sometimes release water, making the dip runny.
- Sweetness Control: If your onions are a bit bitter, a tiny pinch of brown sugar during the last 5 minutes of cooking can help round them out.

- ½ teaspoon salt
- 1 teaspoon minced garlic
- 2 tablespoon red wine vinegar
- 200 gram goat cheese
- 100 gram Sour Cream
- 2 sprigs dill leaves, finely chopped
- handful of parsley, finely chopped
Instructions
- In a large skillet, melt the butter or oil over medium-low heat. Add the sliced onions and salt.
- The First 10 Minutes: The onions will turn translucent and soft. The Next 20 Minutes: They will turn golden. Stir every few minutes to prevent sticking. Add minced garlic at this stage. Not before else it will turn black and bitter.
- Once they are a deep, dark brown (about 30 minutes total), splash in the vinegar to scrape up the browned bits (the fond) from the bottom of the pan. Remove from heat and let them cool completely.
- In a food processor whisk together the sour cream, cheese, and half of the caramelized onions. Reserve half for folding into the dip. Fold the remaining caramelized onions manually, chopped herbs, into the creamy mixture.

Recipe Notes:
- If you do not wish to use wine vinegar use plain water or balsamic vinegar to de glaze the pan. The liquid helps them stay juicy.
- This is a perfect make ahead dip that remains fresh in the refrigerator for 2 – 3 days.
