Eating healthy doesn’t have to mean sacrificing flavour. This Low-Calorie Vegetable Jowar Soup proves that wholesome, real food can taste delightfully satisfying, and so easy to make even on busy days.

As the weather cools down—or whenever you’re craving a light, nourishing meal that feels like a warm hug—nothing hits the spot quite like a steaming bowl of homemade soup. But if you’re trying to stay low-calorie while keeping things gluten-free and vegan, it can sometimes feel tricky to get that satisfying, hearty texture without relying on heavy cream, flour, or processed thickeners.

Enter Jowar Soup. By using sorghum flour, the vibrant vegetable soup achieves a silky, comforting body naturally—all while keeping the calorie count remarkably low.

Jowar is a staple grain in traditional Indian and African cuisines, and for good reason! Because it’s so rich in fibre and unlike refined starches, jowar offers complex carbohydrates that release energy gradually without sharp blood sugar spikes.

So whether you’re looking for a light weeknight dinner, a guilt-free lunch, or a soothing option for detox days, this Vegetable Jowar Soup is about to become your new kitchen staple.

Happy Cooking!!!

Ingredients You’ll Need

  • Jowar Flour (Sorghum flour) finely milled. Substitute it with ragi (finger millet) flour.
  • Light Olive Oil or avocado oil to saute the vegetables.
  • Aromatics: Cumin Seeds (Jeera), Ginger, Coriander Stalks, Garlic
  • Vegetables like onion, carrot, green beans, sweet corn, bell peppers, zucchini, pumpkin, or broccoli work very well in this soup recipe.
  • Low Sodium Vegetable Stock as the liquid base of the soup. You can use warm water as well instead of stock.
  • Seasoning: Black Pepper (freshly cracked) Salt, Oregano and Chilli Flakes
  • Lemon juice (freshly squeezed) and Fresh cilantro/coriander leaves, chopped for garnish

How To Make Soup

Step 1: Prepare the Jowar Slurry

slurry for jowar soup
  • In a small bowl, whisk jowar flour with room-temperature stock or water until completely smooth and free of lumps. Set aside.

Step 2: Sauté the Aromatics

  • Heat oil in a large soup pot over medium heat.
  • Add the cumin seeds, minced ginger, garlic, chopped coriander stalks and onion. Sauté for 2 to 3 minutes until the onions turn translucent and soft.

Step 3: Cook the Veggies

  • Add the carrots, green beans, corn, broccoli, and bell peppers. Sauté the vegetables for about 3–4 minutes on medium-high heat. You want them slightly cooked while retaining a refreshing crunch.

Step 4: Thicken with Jowar Slurry

  • Reduce the heat to low. Give your jowar slurry a quick stir (jowar tends to settle at the bottom), then slowly pour it into the boiling soup while continuously whisking or stirring. This prevents any lumps from forming.
  • Let the soup simmer on low-medium heat for 8 to 10 minutes, stirring occasionally. You’ll notice the soup subtly thickening into a comforting, velvety texture as the jowar cooks through. Turn off the heat.

Hina’s Tips for Variations

  • Protein Boost: Toss in cooked chickpeas, edamame, or cubed organic tofu or paneer during Step 4 for an added protein kick.
  • Zero-Oil Option: Skip the oil entirely and sauté the aromatics in 2 tablespoons of warm water or vegetable broth.
  • Texture Choice: Prefer a thicker meal-soup? Increase the jowar flour, or add ¼ cup of pre-cooked whole jowar grains alongside the vegetables.
