Ingredients

  • 1 Cup long grain white rice
  • 1 Cup quinoa (red or white)
  • 1 ½ Cup water
  • 1 bay leaf (tej patta) optional
  • 2 green cardamom (elaichi) optional
  • ¼ teaspoon salt or to taste
  • ½ Cup mung (moong) bean sprouts optional (recipe)

Instructions

  • Combine equal parts quinoa and white rice in a fine-mesh strainer. Rinse thoroughly under cold running water for 45–60 seconds, agitation with your hands until the water runs mostly clear. Soak them for 15 – 20 minutes in clean water.
1 Cup long grain white rice, 1 Cup quinoa
  • Drain water from soaked grains. Add to the pressure cooker along with fresh water, bay leaf, and salt. At this stage you can add other flavouring agents as well. Pressure cook over low heat for 2 whistles.
1 ½ Cup water, 1 bay leaf (tej patta), 2 green cardamom (elaichi), ¼ teaspoon salt or to taste
  • Turn off the heat. Let the steam release naturally. Open the lid, add green moong sprouts, and mix nicely. Gently fluff with a fork to blend the fluffy rice with the tender quinoa.
½ Cup mung (moong) bean sprouts
  • Quinoa Rice is ready to enjoy.

Notes

  • You can easily cook quinoa rice in an Instant Pot using the pressure cook mode for 6 minutes. Allow the pressure to release naturally.
  • Do not add too much water to cook quinoa and rice otherwise you will end up with a mushy lump of starch.
  • Rinse both quinoa and rice 2 - 3 times or until water runs clear to get rid of starch and dirt from the surface.
