Stir Fry Zucchini Noodles Recipe

This is a guilt and gluten free, stir-fry zoodles recipe. Learn to make low carb, vegan, and healthy zucchini noodles in a few simple steps.

Equipment

  • Spiralizer
  • Stir Fry Pan

Ingredients

  • 2 medium size zucchini
  • 1 tablespoon sesame oil
  • ½ tablespoon minced garlic
  • 1 tablespoon chilli oil
  • ½ Cup cherry tomato, cut into halves
  • ½ teaspoon salt or to taste
  • ¼ teaspoon crushed black pepper or to taste
  • 1 sprig green onion, finely chopped
  • 1 tablespoon roasted sesame seeds

Instructions

  • Wash the zucchini nicely and wipe them dry with a kitchen towel. Cut off the ends of the zucchini. No need to peel the zucchini.
  • Place it on your spiralizer. Turn the spiralizer and create zucchini noodles. Collect them in a colander lined with a paper towel to absorb moisture. Or use a basic julienne peeler to make zucchini noodles.
  • Heat oil in a wok. Add garlic, chilli oil, and onion. Stir Fry them over high heat for 20 – 30 seconds. No need to brown them.
  • Add halved cherry tomatoes. Season them with salt. Allow them to sizzle and release their juices.
  • As soon tomatoes breakdown, add the zuuchini noodles and soy sauce. Stir fry for 2 – 3 minutes over high heat. Don’t overcook the zoodles. You want them to be al dente!
  • Add crushed pepper, peanuts or sesame seeds, and chopped spring onion greens. Stir Fry Zoodles are ready to serve!

Notes

  • The spiralizer is not the only way to make zoodles. You can also use a julienne maker, food processor, or vegetable peeler to make zucchini noodles. 
  • You can adjust the thickness of zoodles as per personal preference. You can keep them thin like spaghetti or broad like fettuccine.
