Couscous Salad

You need colourful array of vegetables, fragrant herbs, and zesty lemon dressing for this vegan salad.

Ingredient

Couscous is a type of pasta made from crushed durum wheat semolina.

Step 1

Pour hot water over the couscous. Cover the bowl and let it sit for 5 minutes. After 5 minutes, fluff the couscous with a fork

Step 2

Whisk together the extra virgin olive oil, lemon juice, minced garlic, za’tar, salt, and pepper until  combined.

Step 3

Combine all the salad ingredients in a bowl including couscous, vegetables, and herbs.

Step 4

Drizzle the prepared dressing over the couscous salad. Toss the salad gently

Step 5

Let Couscous Salad sit for 30 minutes!
