Ingredients
  1. 1 bunch of bathua leaves
  2. 2 Cups of yogurt
  3. 2 - 3 cloves of garlic
  4. 1 green chili
  5. 1 tbsp mustard oil
  6. 1 tsp mustard seeds (rai)
  7. Salt to taste
  8. 1 tsp cumin powder
  9. 1 tsp red chili powder
Method
  1. To prepare the Bathua Raita, first wash the green leaves in water.
  2. Boil enough water in a saucepan and once the water starts rapidly boiling, reduce the heat and add washed bathua leaves.
  3. Blanch the leaves in warm water for less than 5 minutes. Drain the water and let leaves cool down little bit.
  4. In Maharaja Hand Blender chopping jar add blanched greens, garlic, green chili along with one tablespoon of yogurt. Blend till the mixture turns into a coarse paste. Transfer to a bowl.
  5. Whisk remaining yogurt, green paste along with salt, cumin powder and red chili powder using Maharaja Hand Blender. Taste and adjust the seasoning accordingly. Transfer raita to a bowl and set aside.
  6. Heat mustard oil in a small pan over medium heat, once the oil starts fuming add mustard seeds. As the seeds start crackling, turn off the heat. Pour this seasoning over the Bathua Raita.
  7. Serve Bathua Raita at room temperature.
